The famous Spice Cake recipe that Cindy was asking Stephanie about! So easy to make.

 

Rosemary-Vanilla Spice Cake:

Mix together the following ingredients:

2 cup all-purpose flour

3 eggs

1 cup sugar

1/4 cup honey

2 sticks salted butter (that's the French secret!)

2 teaspoons of an equal mixture of cinnamon, nutmeg, aniseed, allspice (or mix of your choice)

1 dash of cayenne pepper

1 tsp vanilla extract or, better, a vanilla pod ground up

2 tsp of baking powder

Paleo version:

2 cup Almond flour

1/4 cup of coconut flour

4 eggs

2 tablespoons of almond OR cashew OR coconut milk (your choice)

1 cup Coconut Crystals (optional)

1/2 cup honey (or, if no coconut crystals, increase to 1 cup)

1 stick salted butter

2 teaspoons of an equal mixture of cinnamon, nutmeg, aniseed, allspice (or mix of your choice)

1 dash of cayenne pepper

1 tsp vanilla extract or, better, a vanilla pod ground up

1 tsp of baking soda

Place batter in buttered and floured round cake pan (alternative, spread on TWO cake pans so you won't have to slice the cake horizontally to add frosting in the middle)

Bake at 350F for 30 minutes or until cooked through. Cool on wire rack.

While your cake is baking, prepare a simple white frosting using the recipe of your choice. A cream cheese frosting is also an option. Once your frosting is ready, add 1 entire pod of vanilla, ground up, OR 3 teaspoons of Vanilla Paste. Add 1 drop of Rosemary Essential oil to the mix (no more! it is extremely potent). The secret is in the quality of the vanilla!

Once your cake has cooled, slice it horizontally and spread half your frosting inside. Place the top part of the cake back, and frost the outer cake. Decorate with sprigs of fresh herbs of your choice (rosemary, thyme or sage - these are not edible as is), and cinnamon sticks for decoration.

You can replace the Rosemary Essential oil with orange oil, or omit it entirely.
